Texas Smoked BBQ Beef Brisket
16 Corned Beef and Cabbage   - this corned beef is simmered for hours, then glazed and baked so it's fork tender for you.  Thin sliced corn beef is served on a bed of white cabbage with parsley potatoes and carrots.  (Meal:  24 oz.)
17 Beef Enchiladas - two enchiladas stuffed with shredded lean beef and refried beans, topped with cheddar cheese and salsa.  Served over seasoned rice.            ( Meal:  28 oz.)

22 Scalloped Potatoes and Ham - this casserole dish brings images of our farm. Slow baked slices of Idaho potatoes layered with onion, pieces of our Virginia Baked Ham and assorted cheeses... Tastes like home.  (Meal:  25 oz.)
